High quality wheat is so
important to us that we have a Great Harvest wheat specialist.
Montana farmers send our wheat specialist a
lot of wheat - about 50 bags of wheat a
year. Our wheat
specialist tests each bag, and then decides which bags aren't up to her
standards (usually about 30-40%). She's got a good eye for wheat.
Our wheat specialist has good taste buds, too.
From each wheat sample she bakes loaves of bread. The thing is, you
don't know what kind of bread a sample of wheat will make until you bake
it and find out. That's why our wheat specialist is so important to

sure we buy only the
best wheat available, and, more than anything else, that's the reason
our bread's so tasty. Without her, we'd have to change our name to
something like "Mediocre Harvest Bread Co."
